You can't access it now, but the Knoxville News Sentinel included a small blurb about ETSU's menu collection. Read about the new initiative at the ETSU website, which featured a press release limning the collection's details. Well, shoot. I can't find the press release, now. But, the KNS bit basically said that ETSU seeks old and new restaurant menus to establish a permanent collection representative of southern Appalachian cuisine within a 100 mile radius of Johnson City, Tennessee.
