The Oregon Senate wants to ban foie gras. California's foie gras industry must shut down by 2012. Sine I've never eaten foie gras, I cannot attest to its value as a luxury food item. But, I read a message on my ASFS listserv Monday that talked about how humane and natural the process was at Grimaud Farms in Stockton, Ca. I eat meat, but it's likely that if I was a vegetarian, that I would have trouble with how ducks are treated. All animals are products used and abused by man. But, our bodies need meat. Many of the vegans and vegetarians that I know and see appear exceptionally unhealthy. And with the JAMA article about people with more body fat outliving the skinny minis.... well...vegetarianism doesn't seem like the best option after all.
In other news Uglesich's, a fine lunchtime institution in New Orleans, will soon close. The owners are old and tired, and there's nobody willing to carry on. They're known for fine oysters and for buying from local fisherman.
Researchers discovered why there are unpopped kernels in the bottom of our microwaved popcorn bags. The leftovers are known as "old maids." Here's the theory: The kernel swells as it heats up, until it finally explodes, creating popcorn. If the moisture leaks out prematurely, or the pericarp collapses, the pressure will not build, and the frustrated consumer is left with old maids.
